No Bake Cookie Dough Fudge


Before we dive into this surprisingly simple and delicious recipe, here are 3 reasons you need to give it a try:

  1. It is refined sugar free, yet it’s oh-so-indulgent tasting and will certainly satisfy your sweet tooth.

  2. It only takes 6 ingredients and it checks a ton of boxes: gluten-free, dairy-free, low carb, vegan, and best of all, EASY!

  3. This recipe is freezer friendly, so you can make a batch ahead of time and be prepared for the next family gathering or girls night. Or the freezer trick can keep you from eating the whole batch at once. (No judgment, I speak from experience…)

All about Tahini

The secret ingredient is Tahini, and if you’ve never heard of tahini, don’t worry, I hadn’t either until recently. But it turns out it’s quite simple: it’s just ground sesame seeds! Similar in texture to raw peanut butter, tahini is high in protein, low in carbs and rich in Omega 6 fatty acids. I love the brand Soom Foods because it’s female-founded and operated, the ingredients are clean and their tahini is made with Ethiopian White Humera sesame seeds, which produces a silky smooth texture.

INGREDIENTS

1 cup tahini (I use Soom)

1/4 cup melted coconut oil

2 tbsp pure maple syrup

1/2 tbsp vanilla extract

1/4 tsp salt

1/4 cup chopped chocolate*, plus 2 tbsp to sprinkle on top

*I love using ChocZero bars because I love the aesthetics of the chopped chocolate and I love the taste, but you can also use these or these chocolate chips.

DIRECTIONS:

Line an 8x4 loaf pan with parchment paper.

Set 2 tbsp of chocolate aside.

Mix the remainder of your ingredients in a bowl ‘til smooth. No mixer needed, it will come together with a spoon.

Pour your batter into your loaf pan and freeze for 5 minutes.

Remove from the freezer to sprinkle remaining chocolate on top. Then place it back in the freezer. (This keeps all of the chocolate from sinking to the bottom, so you’ll finish with prettier bars.)

Freeze until firm, another 30 minutes or so. Sprinkle with flaky sea salt before chopping into bars, if you desire.

These will melt in your mouth and your hands so keep in the freezer and let thaw for a few minutes when you’re ready to indulge. 💕 If you plan on indulging one-by-one, I recommend pre-cutting the loaf into bars so you don’t have to thaw the entire pan each time you want a sweet treat.
