Mocha Energizing Bites
Energy Balls. Energy Bites. Fat bombs. No matter what you call them, they've been taking my Instagram feed by storm, and I think we have the Ketogenic diet to thank. I'm not 100% sure, but I also don't really care, because all that matters is A. I have discovered them and B. They are fabulous!! Some days I just need that extra pick-me-up, and having a handful of these in my freezer keeps me from reaching for a carb-heavy, protein-starved snack that would do nothing to really boost my energy or nourish my body. And trust me when I say these are so simple to make. Double a batch and freeze half. Let's call this "snack prepping."
I loved the idea of incorporating caffeine into them with the addition of coffee, but if you don't drink coffee, feel free to skip that step. I've stopped drinking coffee most days, relying instead on my matcha lattés, but that doesn't mean I don't still love the aroma and flavor of coffee, and it's a small dose per bite so I don't notice any spike crash.
As a bonus, if you're doing the Whole30 thing (bless you, for you are stronger than I), these pass the bill! I used dates as a natural sweetener, so there is no refined sugar in these babies. No gluten or dairy either. Enjoy!
INGREDIENTS
Makes approximately 12 - 15 bites
1 cup cashews
1/2 cup Cacao Hemp Almonds by Navitas Organics*
1/2 cup pitted dates
1 tbsp hemp seeds by Navitas Organics
1/2 tsp ground organic coffee
1 tsp cacao powder by Navitas Organics
2 tbsp coconut oil, melted
1 tbsp coconut milk
DIRECTIONS
1. In your food processor, blend cashews and almonds until they are in fine pieces.
2. Add in dates, and pulse some more.
3. Add in all remaining ingredients and blend until combined.
4. Hand roll or scoop dough into bite-sized balls.
5. Store in fridge or freezer. (If freezing, let thaw for 5-10 minutes before consuming for better flavor and consistency.)
Optional: Roll in cacao sweet nibs, sprinkle with chocolate chia seeds, decorate with edible flowers.
*You can substitute the cacao hemp almonds with raw almonds, more cashews, or pecans.
